Your setup is not so complicated. You have a virtual instrument track controlled by a MIDI device, and you have an audio track for your overhead mic.

If you already have a donor for a 14" snare, Dave at Diamond Percussion has multiple piezo drop in, or fully built snares.
Rob has the ATV and he likes it.

A quick check and I see a RPi5 is about $100.
Add to that the I/O for 12 inputs, MIDI, a case for it all and the software. All of it will make the eDRUMin unit much more expensive, and a lot of the RPi functions will not be used. So, that's quite the waste to go that way.

You have to pick 3, bell, tip and edge. Bow tip 1, whether it is #54, 59, 84, 87,... is all the same sound. So, pick a note and stick with it.
