Most likely the issue is that you are getting double triggering, and the quieter mistriggers are effectively muting the real hits. I suspect you'll need to adjust the decay control.

Can you hit the edge of your hihat with a medium force and then take another screenshot of the hihat cymbal settings so I can see what the transient for the hihat looks like.

1 - I'm using EzDrummer 3 as a VST here, but there is no preset for it (only for Superior Drummer). So, I created a custom preset. The problem is that every time I reopen both programs (EzDrummer and Edrumin), the configuration I made is lost, and I have to redo most of the pads (cymbals and pads)....

For drumming, you probably wouldn't use Control Change. But imagine you are playing guitar and want to use an expression pedal (or hihat controller pedal) to control some effects for your guitar. That's when you would use control change mode.
